Crunchy Broccoli Salad |
ckelson writes, "I am always in need of a great salad either to serve as a side dish, or good enough to play a starring role at dinner time. When I tasted this salad at the Boise Co-op I knew I needed to have it in my repertoire of go-to salads. In my version of this crunchy broccoli salad, I used the left over bacon fat as the oil for the dressing and combined a pre-made coleslaw dressing with half and half to create an easy, tasty salad dressing that is ready in minutes. This salad can also be made a few hours in advance and stored in the fridge as the flavors marry together; just wait to add the almonds and bacon until ready to serve so they retain their snappy crunch. "

Simple French Onion Soup |
ckelson writes, "Well, we finally have snow! (At least in the mountains.) I am sure some thanks goes to those folks who gathered for a Shoshone snow-dance at Bogus Basin or maybe Mother Nature just decided it was time to bring us some of that fun, fluffy white stuff. Either way, winter is in full swing and there is no better time to enjoy a lovely bowl of soul-warming soup, to be more specific, the ubiquitous French Onion soup. The simplicity of this broth-based soup is exactly the kind of comfort food I crave during these cooler days. Bon Appetit!"

Seared Beef Roast with Creamy Mushroom Gravy and Potato Cauliflower Mash |
ckelson writes, "Food can create powerful memories. Some of my fondest memories are Sunday night dinners with my family growing up, and visiting my grandparents for great skiing. The meal served was always a seared, slow-cooked beef roast with mashed potatoes and gravy. Mmm...Even now I can picture being 11 years old, just arriving in my grandma's warm kitchen on a chilly winter's evening and she is serving this delicious dinner. Comfort foods are more than just its ingredients, they are rich foods steeped in charming nostalgia. The recipe this week is a tribute to both my mother and grandmother; thank you for all the deliciously, thoughtful homemade dinners and the lovely memories that go with them."

Cajun Shrimp Gumbo |
ckelson writes, "January for me is all about comfort foods. It's cold outside. I feel like hunkerin' down, reading a good book and cookin' up some comfort foods that warm the soul. Good ol' gumbo is the first dish that comes to mind. My grandmother was from Louisiana and taught me how to cook this roux when I was 9 years old. My dad, who is a great cook, continued her tradition by making gumbo every New Year's with black eyed peas to bring good luck for the upcoming year (as the folklore goes). So here we are, it's a new year and couldn't we all use some luck? "
